Veggie Packed Scramble With A Texas Twist



SW Scramble, veggies, and protein for clean nutrition

Is there anything better than those mornings you actually have time to sit down and enjoy a flavorful breakfast? We love to start our day with this SW Scramble! It's easy to customize and fuels us for even the busiest days.


Ingredients

  • 2 Eggs

  • 2 TBSP Cheddar Cheese Shredded

  • 1 Cup of Bell Peppers & Zucchini

  • 2 TBSP Diced Yellow Onion

  • 1/2 of an Avocado

  • 1 TBSP Olive Oil or Coconut Oil

  • 2 TBSP Salsa

  • Seasalt & Pepper

Directions

  1. Warm oil in a non-stick pan over medium heat

  2. Add onion, peppers, & zucchini to pan. Saute for 2-3 minutes.

  3. Once fragrant, crack eggs into a bowl and whisk. Season with salt & pepper.

  4. Pour the eggs into pan and scramble with cheese and veggies until cooked to desired consistency.

  5. Top with fresh avocado & salsa
