Veggie Packed Scramble With A Texas Twist
Is there anything better than those mornings you actually have time to sit down and enjoy a flavorful breakfast? We love to start our day with this SW Scramble! It's easy to customize and fuels us for even the busiest days.
2 TBSP Cheddar Cheese Shredded
1 Cup of Bell Peppers & Zucchini
2 TBSP Diced Yellow Onion
1/2 of an Avocado
1 TBSP Olive Oil or Coconut Oil
2 TBSP Salsa
Seasalt & Pepper
Warm oil in a non-stick pan over medium heat
Add onion, peppers, & zucchini to pan. Saute for 2-3 minutes.
Once fragrant, crack eggs into a bowl and whisk. Season with salt & pepper.
Pour the eggs into pan and scramble with cheese and veggies until cooked to desired consistency.
Top with fresh avocado & salsa
