Strawberry Chia Seed Pudding in Mason Jar



Chia pudding is one of my favorite snacks to prep. It is very reminiscent of tapioca pudding and definitely feels like a treat when I have it! It's easy to make, customize flavors, and saves well for the week. You can make the base and change it up by adding different fruit, protein powder, nut butters, or toppings of choice. This makes for a great grab-n-go breakfast, snack, or even satisfies those late night sweet cravings.





Strawberry Chia Seed Pudding


Ingredients

Makes 4 servings

  • 2 cups coconut or almond milk

  • 16oz fresh strawberries

  • 3 tbsp maple syrup

  • 1 tsp vanilla extract

  • 1/2 cup chia seeds

  • 1 scoop of unflavored collagen or vanilla protein

  • Extra strawberries for garnish

  • Coconut flakes for garnish


Directions

  1. Slice the top off the strawberries or hull them and roughly chop

  2. In a blender or food processor, combine the chopped strawberries, milk, maple syrup, and vanilla extract.

  3. Blend or process on high until smooth.

  4. Add the chia seeds and pulse gently, so that it is well distributed.

  5. Pour it into serving bowls or cups

  6. Cover and refrigerate for anywhere between an hour to overnight.

  7. Server chilled with fresh strawberries and/or coconut flakes
