A fresh herbaceous twist on salmon. Simple ingredients that are packed with flavor
This lemon basil garlic salmon is the perfect summer dish! Add to your favorite pasta, veggies, or salad. Salmon is great year round and adds healthy fats and protein to your diet. If possible, aim for fresh caught salmon as opposed to farm raised. Fresh caught salmon offer higher levels of vitamins and minerals such as omega-3's and selenium compared to their farm raised counter parts.
Lemon Basil Garlic Salmon
Ingredients:
4 salmon fillets
1/2 cup butter
2 Tbsp ground garlic
1 tsp sweet basil leaf, dried
1 teaspoon pure vanilla extract
1 pinch red pepper flakes
2 lemons
Directions:
Preheat to 375°F
Place each fillet of salmon on a foil sheet(one sheet per fillet)
In a microwave-safe bowl, combine butter, garlic, basil, and red pepper
Microwave 30 seconds to 1 minute until butter is melted, stir well. Spoon butter mixture evenly over the fish.
Squeeze half a lemon over each fillet. Wrap in foil, place on baking sheet.
Bake for 15 to 17 minutes, until cooked.
Turn oven on to broil high.
Broil 1-2 minute to crisp edge up edges of salmon. Serve
*For a fresh side dish try serving with a slaw style salad. Toss 2 cups spinach, bag of coleslaw mix, 2 diced apples, 2 tbsp walnuts, 1 tbsp of sunflower seeds, and drizzle with olive oil & vinegar of choice.
