These sweet potatoes look so fancy but take minimal effort and time to prepare. Sprinkled with goat cheese and pistachio, this combo is ELITE.

Honey Garlic Sweet Potatoes

with pistachio & goat cheese


Ingredients

  • 2 medium potatoes, sliced lengthwise & scored(shallow kriss cross cuts)

  • 2 Heads roasted garlic

  • 3 TBSP Unsalted butter, melted

  • 1 ½ TBSP Honey

  • ½ TSP Salt

  • ¼ TSP Pepper

  • 2 TBSP Fresh chopped parsley

Toppings

  • 2 TBSP Fresh Chopped Parsley

  • 2 TBSP Chopped Pistachios

  • 2 TBSP Crumbled Goat Cheese

  • 2 TBSP Honey for drizzle


Directions

  1. Preheat the oven to 425 F. Line a sheet pan with parchment paper and set aside.

  2. Prepare butter spread: Add butter, garlic, honey, salt and pepper to a small bowl and mix until combined. Set aside.

  3. Add sweet potatoes to the sheet pan, then spoon butter mixture evenly over the potatoes.

  4. Divide the parsley between the potatoes and cover the sheet pan with a piece of aluminum foil.

  5. Place potatoes in the oven for 30-40 minutes until the potatoes are tender. Remove aluminum foil and roast for another 5 minutes.

  6. Top with parsley, pistachio, goat cheese, and honey drizzled on top. Enjoy!
